This week Mike takes over Handle It and teaches you how to make Chicken Adobo Waffles, a Filipino dish that’s been taken to the next level!
4 Chicken thighs
1/2 cup of vinegar
1/2 cup of soy sauce
1 Tbsp of pepper corns
1 Tbsp of minced garlic
3 bay leaves
1 Cup of maple syrup
1 Bag of pork rinds
1/2 a cup of melted butter
1 Tbsp of vanilla extract
1 1/2 cups of buttermilk.
1 3/4 cup of flour
1 Tbsp baking soda
2 Tbsp of baking powder
1 Tsp sugar
1 Tsp salt
3 Mixing bowls
1 Chef knife
1 Cutting board
1 Frying pan
1 Wooden spoon/ Slotted spoon
1 Small sauce pan
1 Waffle maker
Cut chicken thighs into bits then add to a mixing bowl with 1/2 cup of vinegar, 1/2 cup of soy sauce, 1 Tbsp of pepper corns, 1 Tbsp of minced garlic and 3 bay leaves then let marinate for 1 hour.
Cook the chicken in a frying pan on high heat for 7 minutes until cooked then reduce heat and let simmer for 10 minutes until juices reduce. Save the juices from the chicken once cooked.
Measure out 1 cup of drippings from the chicken and 1 cup of maple syrup then bring to a boil and reduce heat then simmer for 10 minutes. Once the syrup has reduced refrigerate until ready to use.
In a mixing bowl add 1/2 a cup of melted butter, 3 eggs, 1 Tbsp of vanilla extract and 1 1/2 cups of buttermilk. In a separate bowl add 1 3/4 cup of flour, 1 Tbsp baking soda, 2 Tbsp of baking powder, 1 Tsp sugar and 1 Tsp salt then add to the dry mix and stir well with a whisk.
Add batter slowly to chicken, be careful not to over batter. Pour batter on to a well greased waffle maker then cook for 3 to 5 minutes.
Once the waffles are cooked garnish with pork rinds and adobo syrup.
