Try our delicious homemade classic “choux pastry”: vanilla eclair. It is filled to the brim with smooth and creamy custard topped with chocolate glaze – yum yum!


Ingredients :

For pastry :
1 cup Refined Flour
4 Eggs
240 ml Water
60 gm Butter

For Chocolate Glaze :

100 ml Heavy Cream
100 gm Dark Chocolate

Custard Filling :
4 tbsp Custard Powder
50 gm Sugar
500 ml Milk
150 gm Whipped Cream

Method :


In a pan add 240 ml water, 60 gm butter. Once the butter is melted add 120 gm refined flour & keep it on low flame, mix it well for 1 minute.

Take that mixture in bowl, cool it slightly.

Add 4 eggs in that mixture. Mix it vigorously.

Fit a pastry bag with a large plain piping tip & fill it with mixture. Pipe dough into 4 or 5 inch (10 -12 cm) long elongated strips on a parchment paper lined baking sheet.

Bake in preheated oven at 220° c for 30 minutes until golden.

Put 400 ml milk in a pan, take one cup milk separately & add 4 tbsp custard powder in it. Mix it well. Add 50 gm sugar in custard mixture and then add it to milk. Boil it properly.

Refrigerate custard for 2 hours. Once custard is set mix it into 150 gm whipped cream.

Take 100 gm dark chocolate in 100 gm whipping cream & keep this in microwave for 30 seconds.

Insert this freshly prepared cream into our baked eclairs & glaze it into yummy chocolate mixture. Serve this choux pastry with love & have fun!
