INGREDIENTS for Easy veggie Wellington – Mushroom and nuts puff pastry roast – Vegan:

* 2 sheets of vegan puff pastry
* 1 1/2 cup mirepoix (celery, onions, carrots)
* 3 cloves of garlic minced
* 8 oz oyster mushrooms, chopped
* 1 nob of vegan butter,
* a drizzle of olive oil
* 1/2 cup mixed nuts of your preference
* 1/2 cup dried cranberries
* 1/2 cup of minced fresh herbs (sage, parsley, rosemary)
* 3 tablespoons flaxseed soaked in 6 tablespoons water
* 5 or 6 dried figs, halved
* 1/2 cup breadcrumbs
* 1/3 cup flour
* salt and pepper, to taste
* pinch of nutmeg
* 1/2 cup squash cubed and roasted in 1 teaspoon of cinnamon, a pinch of pepper, salt and drizzle of olive oil
* 1 cup of cooked quinoa
* 1/4 cup red wine
* 1 tablespoon vegan mayo for brushing on top of puff pastry
