📑 RECIPE – Potato, Onion and Cheese Filo Pastry | Patatnik | Potato Borek | Potato filled Phyllo
• 2 bunches green onion
• 30 leaves fresh mint
• 2 lb. potatoes
• 2 eggs
• 7 oz feta cheese
• 8 sheets phyllo dough | filo pastry
• 2 tbsp butter
1. Process the potatoes, onion, mint, eggs and feta cheese in a blender (alternatively you can shred the potatoes and cheese and dice the onion and garlic) until you reach a semi-chunky consistency
2. Grease the baking pan with oil and/or butter or use baking paper
3. Lay 4 filo sheets at the bottom of the pan and pour the processed mix on top, spread the mix evenly
4. Use the edges of the filo sheets to nicely wrap the mix on the sides
5. Use the remaining 4 sheets of filo to lay on top
6. Bake at 400F until golden-brown / about 30min /
