I know there is so many recipe about puff pastry out there and they all great. I made many time before but never share it in the video so here is my way. A lot of layers and the texture was very flaky. I used European style butter for this recipe. The different with Danish pastry dough or Croissant dough is that this recipe doesn’t use yeast and egg. It’s only flour, butter, salt, and ice water. And butter for the laminating process.
The roll out and folding process I did four times, double turns for each process with 30 minutes interval rest in the fridge. Overnight in the fridge and ready to bake in the next day.
Very simple ingredient, easy methods, time consuming process and need to be patient.
