Mango Cake

This Recipe Serves 10
Takes 50 minutes
1 Cup is 250 ml
Gluten & Dairy

1 ¼ cup Plain Flour
1 ½ tsp Bicarbonate Soda
½ cup Sunflower Oil
½ cup Caster Sugar
¼ cup Yoghurt
¾ cup Mango Puree

– Pour the flour, bicarbonate soda & sunflower oil in a bowl and mix it nicely
– Add the caster sugar, yoghurt, & mango puree
– Mix it nicely
– Transfer the dough into a baking tray
– Bake it by 180°C for 20-25 minutes

2 cups Soy Milk
½ cup Plain flour
⅓ cup Sugar
1 tsp Vanilla Essence
2 Tbsp Lime Zest
2 Tbsp Marmalade Jam
1 tsp Lemon Juice
⅓ cup Mango Puree
A bit more Mango Puree for the decoration

– Pour all the ingredients in one pot and mix it nicely. Cook the icing for a few minutes until it gets a bit thickened
– Garnish it on the cake before serving and decorate with mango puree
