This Tomato Basil Tart is an easy breakfast recipe full of summer flavors.

Ingredients for 4 serves:
• 1 puff pastry, thawed
• 5 red cherry tomatoes
• 5 yellow cherry tomatoes
• 1 teaspoon of black pepper
• 1 teaspoon of salt
• 2 tbsp of chopped fresh basil
• 60 g ricotta
• 2 eggs
• 30 g grated parmesan

Step 1
• Cut the tomatoes into slices and and place them on a paper towel.
Step 2
• Add the ricotta in a bowl and combine it with 1 egg, grated parmesan and fresh chopped basil.

Step 3
• Season with salt and mix until well combined.

Step 4
• On a floured surface roll the puff pastry and transfer it onto a tray

Step 5
• Cut slightly the pastry leaving 2.5 cm as a border

Step 6
• Spread the ricotta mixture, arrange the tomato slices on top and grease the border with 1 egg.

Step 7
• Bake at 180° C for 20 minutes until the crust is golden.
