Ingredients:
2 red or gold potatoes
½ tsp dried thyme
½ tsp dried dill
½ tsp dried marjoram
½ tsp red chili flakes
½ tsp paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp dried oregano
½ tsp kosher salt
½ tsp black pepper
2 sprigs fresh rosemary
¼ cup olive oil

Tzatziki:
½ cup Greek yogurt
1 small cucumber, peeled, seeded, grated and strained
8 mint leaves, finely chopped
2 tsp red wine vinegar
Salt and pepper to taste

Garnish:
¼ cup feta cheese, crumbled
1 red tomato, diced
2 Tbsp red onion, small diced
Chives, thinly sliced
Zest of half a lemon

Steps:
1. Preheat oven to 400°F.
2. Cover whole unpeeled potatoes in water and boil for 7 minutes. Drain and cool in cold water until room temperature.
3. Thinly slice about ?-inch thick slices straight across, but not through the potatoes. Mix the dry herbs and spices together in one bowl and place the olive oil in another. Bunch the rosemary together to create a brush. Dip in the olive oil and brush the potatoes outside and in the slits. Sprinkle the seasoning mix over the potatoes.
4. Bake potatoes on a baking sheet for 10 minutes. Brush again with rosemary and olive oil and sprinkle seasoning. Repeat every 10 minutes until potatoes are cooked through.
5. Make the tzatziki. Mix together yogurt, cucumber, mint and red wine vinegar. Season with salt and pepper to taste.
6. When the potatoes are done and cooled slightly, dollop with tzatziki, tomatoes, onion, feta crumbles, chives and lemon zest.)
